Hello! I’m Althea Brown, a Guyanese-American mother of three, wife, food blogger, recipe developer and Whole30 Certified Coach.
I spend my days in my Denver, Colorado home loving on my family, the best way I know how – through my food and cooking. My recipes range from Traditional Caribbean (mostly Guyanese) to Wholesome Caribbean with gluten free, dairy free and sometime sugar free options as I experiment with making great food that is also good for you. January 2021 Recipe: Ground Beef Chow Mein
Ground Beef Chow Mein is nutrient packed, low carb and a flavor explosion in every bite. It is the wholesome remix to a Caribbean Classic that's a must add to your meal prep.
Traditional noodles are replaced with yellow squash cut into noodles with a spiralizer. The squash noodles serve as a blank canvas taking on all the flavors and texture of the original dish. Trust me, you will not miss the regular chow mein noodles in this dish. You will certainly enjoy the variety of crunchy and tasty vegetables, a subtle hint of Chinese 5 Spice and a little sweetness from the coconut aminos. Pro-Tip for Easy Prep: Cook the meat and veggies ahead on your meal prep day. Then add your squash noodles when you are ready to eat. Toss the noodles in with your reheated meat and veggies and you will have a quick an easy dinner in no time.
