March 2021 Recipe: Plantain & Chicken Hash

Looking for a tasty any time dish, that is wholesome, nutrient dense and easy to meal prep? Then add this Plantain and Chicken Hash to your menu this month! This is a play on Caribbean boil and fry ground provision, but in one simple dish. You can substitute the ground chicken in this recipe for any protein. Even sautéed salt fish works! You can make the recipe as is or remix it by adding tomatoes, carrots and fresh spinach like I did here. Top it with a fried egg for breakfast or pair it with some avocado slices and hot salsa or pepper sauce for lunch.
Pro Tip for Easy Prep: Choose firm sweet plantains that are yellow but not black. These will have the right amount of sweetness and starchiness for this dish. Have an air fryer? Then cook your plantains in your air fryer while you prep your protein, 10 minutes at 400 °F is all you need. This cuts the recipe time down by almost 50%.
