Malasadas (Guyanese Pancakes)

We are back with another Caribbean recipe from Metemgee Blog Founder, Althea Brown.
In preparation for the 2024 Lent season, here is a dish traditionally made the day before Ash Wednesday by Catholic people in Guyana. While its origins lie in the 19th century by Portuguese settlers, it is now made in a variety of households as a sweet and deep-fried dessert or breakfast.
Below you will find Althea’s recipe for Malasadas, Guyanese pancakes that are light and fluffy dough balls.
From Metemgee: Malasadas or Guyanese pancakes are light and fluffy deep-fried yeast dough balls drizzled with cinnamon simple syrup. It is traditionally made the day before Ash Wednesday, called pancake day by Catholic people in Guyana.
