Callaloo Cauliflower Cook-up Rice has all of the traditional flavors of the classic callaloo cook-up rice but is low carb and grain free. Experience the deliciousness of callaloo (spinach), pumpkin or butternut squash and riced cauliflower simmered in rich and creamy coconut milk. Not on the rice cauliflower party bus? This dish is packed with so much flavor and tastes so similar to the traditional dish that you will enjoy every bite.

Pro Tip for Easy Prep: This dish takes 30 minutes to make, prep and cooking combined. To make things even more simple choose frozen ingredients. Frozen spinach, butternut squash and riced cauliflower makes this an easy one pot dish. You may also add cooked protein, like cubed chicken or some shrimp to make it a complete meal.
